Mitsuaki Takada-san has trained under Hiroshi Ashi-san for years before setting up his own sharpening house, Takada Hamono late 2019. Takada-san has a unique sense of beauty in his patterns and profiles but what sets his work apart from other blades is his consistent convex grind that imbues both strength and cutting ability in perfect balance; additionally, his style minimizes ingredient stiction to the blade. He is a jolly man full of smiles, and we are proud to support his new venture.
He offers a few different finishes for his blades, and HH Hanabi is a identification for Takada's firework inspired hammered finish.
A small santoku like this gives a lot of utility on the cutting board without sacrificing too much of the length. We have found this shape to be a great addition to a set as it gives more chopping ability than utility/petty blades of a similar length. We recommend this blade to any cooks with knowledge/willingness of high carbon steel maintenance, looking for a compact all-purpose blade.
