Japanese Knife Glossary

Here are some Japanese terminology and their meanings that you will find throughout our website.

  • Kurouchi - means "blacksmith's finish", and is a type of black surface finish that can be applied to knives, or found on knives naturally after the forging process.
  • Gyuto - directly translated to mean cow blade; A gyuto is a chef's knife.
  • Wa - Japanese-style
  • Saya - sheath
