(Limited) Hitohira NM Damascus Santoku 165mm Imitation Mahogany Handle
These are the last of the NM line which is made from hand forged VG-1 stainless steel. NM refers to the first two letters of the two makers responsible for the blade. The steel feels incredibly finely grained, no doubt thanks to the hand-forging, and we found that it offers great edge at around #1000 - #3000, with maximum edge retention.
It features very slightly hollow ground bevels, making these knives extremely thin behind the edge, yet they maintain good thickness on the spine for stability. We recommend these knives for both experienced users and beginners with practicality and performance in mind.
Santoku is an all-purpose blade that is incredibly useful for small kitchens and it is the one that most home cooks should purchase first. Even folks who use paring knives for everything can quickly get used to this blade since it brings so much utility in a compact size.
