Tosho x Funaki White #2 Kurouchi Gyuto 180mm Urushi Rattan Wrap Handle (Ivan Polished)
These White #2, burnt Urushi Kurouchi kitchen knives are made by a blacksmith in Kyoto named Yoshihiro Funaki. When Tosho Knife Art’s co-founder, Ivan Fonseca, first came across these knives, he was very impressed with Funaki-sans’s attention to detail, steel treatment, as well as his burnt Urushi Kurouchi which has a deep black, ink-like finish.
Ivan wanted to sharpen and polish them to further bring out the potential of the steel character and details, in both the soft iron cladding and core steel.
Ivan and Funaki-san decided to work together to produce these unique knives for Tosho Knife Arts. We hope that the combination of Funaki-san’s masterful blacksmithing skills and Ivan’s renowned sharpening brings joy to the owners of these knives.
We are very excited for everyone to experience the artistry from this Kyoto-Duo, and we would love to hear your thoughts!
A chef's knife ('Gyuto' in Japanese) is the most versatile blade that can handle almost anything in the kitchen. Their shape and often generous edge length mean that whether it's cutting small tomatoes or portioning a large roast, you can do it with one blade. Most cooks have multiple chef's knives and it is not hard to justify getting one more when it has so much utility.
