NM line is made from forged VG-1 stainless steel with various finishes. NM refers to the first two letters of the two makers responsible for the blade. The steel feels incredibly finely grained, no doubt thanks to the hand-forging, and we found that it offers great edge at around #1000 - #3000, with maximum edge retention.
Geometry: NM line has a very slightly hollow ground wide bevels, making these knives extremely thin behind the edge, yet they maintain good thickness on the spine for stability. We recommend these knives for both experienced users and beginners with practicality and performance in mind.
Nakiri is a versatile blade that excels in processing large amounts of vegetables and the rectangular shape is also very useful to pick up all the chopped bits!
