Hitohira STK V10 Gyuto 210mm Rosewood Handle
The STK line has got so much going for it; full stainless steel for ease of maintenance, both Damascus AND hammered finish as well as a beautiful dark wood handle. The edge is thin enough to not wedge terribly on hard root vegetables such as sweet potatoes, but more durable than some of our more performance-focused blades such as T10 Tsuchime series.
We recommend the STK line for cooks looking for a balanced, easy-to-care-for blade with both performance and aesthetics in mind.
A chef's knife ('Gyuto' in Japanese) is the most versatile blade that can handle almost anything in the kitchen. Their shape and often generous edge length mean that whether it's cutting small tomatoes or portioning a large roast, you can do it with one blade. Most cooks have multiple chef's knives and it is not hard to justify getting one more when it has so much utility.
