Jiro Tsuchime Wa Gyuto 225mm Taihei Tagayasan Handle (#258)
This product is currently sold out.
The #258 Wa Gyuto has all the hallmarks of the classic Jiro blade: compared to the #260, it is flatter at the tip by a hair, and the elongated neck is perfect for relaxed 'racket' grip for push cuts.
Uniquely, it has an area on the right side near the tip where a generous amount of core steel is exposed. If you dig an interesting cladding line formation, this is it.
A chef's knife ('Gyuto' in Japanese) is the most versatile blade that can handle almost anything in the kitchen. Their shape and often generous edge length mean that whether it's cutting small tomatoes or portioning a large roast, you can do it with one blade. Most cooks have multiple chef's knives and it is not hard to justify getting one more when it has so much utility.
