Tadafune Vintage SK Komakiri Gyuto 230mm Rosewood Handle (Brass Pin)
This product is currently sold out.
There is a small movement of this kind of tall shape of Gyuto back to 20-30 years ago, but recently not many people are able to make this shape because it is more difficult and make much more expensive. We are not sure how much was their payment at 30 years ago for sharper, but we know that sharpeners social status weren't high as much as now, and they don't have enough status even now. We will never get the same shape knife with the same price range in the future unless we find other ones from another closed supplier.
Tadafune or Masatoshi is probably the name that owned by that retired supplier, but there is no important meaning because many suppliers made so many different names to hide where the maker is. This is using rosewood handle which is most of the people used to make Gyuto around Tokyo, with both available with brass and stainless handle pins.
limited available at Ai and Om knives and Tosho Knife Arts as well.
