Hatsukokoro Komorebi Blue #1 Damascus Gyuto 240mm Ebony Handle
Another great series from the Hatsukokoro brand. Komorebi refers to the effect of the sunlight streaming through the leaves. What a perfect way to describe the subtle misty finish on these knives, contrasted by the brightly polished core steel comprised of long-lasting Blue #1 carbon steel!
In addition to the beautiful surface aesthetics, the Komorebi Damascus series features taller heel height dimension for blades in the same Japanese blade length, providing extra knuckle clearance and ease of chopping tall produce in your kitchen. Furthermore, the convexity along the edge provides durability for a tall blade, and the rounded choil & spine provide comfort that you want for extended periods of usage (and you won't want to let these go when you have them in your hand!). Lastly, the bevels are ground closer to 60/40 for a right-handed person bias, and there will be some cosmetic inconsistencies on the surface finish, given the hand finishing processes these go through.
We recommend these blades to discerned knife users that are comfortable with the edge touch up on waterstones, and looking for an extra performance with taller heel heights. A big plus if you already have a rust prevention routine or prepare to learn, as this is a fully reactive carbon steel blade.
