Kaneshige Cutlery & Konosuke-Sakai
Founded in 1932 by current president Kosuke Kawamura’s father, Kaneshgie Cutlery Co. has been bringing Sakai-made blades to the rest of the world for decades. Kaneshige is technically a parent company of Konosuke-Sakai, yet the workers for both companies work in the same building side by side.
President Kosuke-san works closely with the co-founder of Tosho Knife Arts, who is an extraordinary sharpener/polisher, Ivan Fonseca to showcase the craft of some of the most recognized blacksmiths and sharpeners all across Japan.
Even though they themselves do not forge or craft blades (yet), Konosuke has an amazing eye for details and is well known for their impeccable fit & finish of their knives. They do handle attachments though, and their handle installation quality and alignment are second-to-none and this is true for nearly every blade we have seen from them over the past 6 years.
They are always looking for new and innovative designs from their makers and is pushing the boundaries of Japanese knife making industry through their unyielding commitment to quality and consistency.
We are extremely proud to represent their hard work here at Tosho.
Geometry: Keiai V-gold line has a very slightly hollow ground wide bevels, making these knives extremely thin behind the edge, yet they maintain good thickness on the spine for stability. We recommend these knives for both experienced users and beginners with practicality and performance in mind.
