The Sanjo line features an amazingly thin edge (super high-performance) that makes you feeling like using a laser in the kitchen. Though with great power comes great responsibility; the Sanjo line is not for a user without the gentle technique that the thin edge demands (otherwise it can micro-chip easily). This finish is done for specially for Tosho, featuring almost all the possible textural and aesthetic additions, except for damascus, in one blade. The SKD12/A2 steel is one of our favourites for its ease of sharpening, edge holding, and its toothy quality.
A petty (utility) knife probably gets used most often after your all-purpose knives. It can be used to cut small fruits, vegetables, and even some smaller cuts of meats (any many many more things, like cutting through plastic wrapping from a grocery trip!) If you have one, for a quick meal for two, you may just get it done without a chef's knife.
