This specific Sanjo line is done for Tosho, featuring almost all the possible textural and aesthetic additions, except for damascus, in one blade. The A2 steel is one of our favourites for its ease of sharpening, edge holding, and its toothy quality. The edges are very thin, so we recommend extreme caution during initial usage even for expert users to avoid microchipping. We recommend these knives for experienced users who are looking for both ultimate performance and aesthetics in a single blade.
