These stunningly finished knives are perfect for pragmatists looking for a high performing blade with a long-lasting edge with minimum rust management, thanks to the SG2 steel and excellent grinding done by Myojin (actually, who wouldn't want this?). This edge is thin, and it may chip if used without proper technique or care. We recommend using it slowly with gentle pressure at first, to get acquainted with the blade.

A kiritsuke-gyuto is a chef's knife with a slanted tip from a traditional single-sided blade called a kiritsuke. It is essentially a chef's knife with a twist. It serves the same function as an all-purpose knife, and although some swear that the accentuated tip makes it easier to execute fine cuts, we find that the k-tip mostly offers aesthetic power boost (rough guess 50%).
