Nakagawa Satoshi is a renowned smith hailing from Sakai-city, who apprenticed under master smith Kenichi Shiraki before taking over the master’s forge upon his retirement a few years ago. Satoshi borrowed from his mentor’s knowledge of stainless steel forging and adapted it to create exquisite blades from Blue #1 carbon steel. 

The sharpener for this Nakagawa Satoshi blade is Myojin Naohito, who has already amassed over a decade of sharpening experience at the young age of 31. Known for his sharpening work on the iconic Fujiyama line by Konosuke, the precision and refinement of his hamaguri (convex) style sharpening offers supreme smoothness when cutting, on top of an aesthetically stunning finish. 

Nakagawa’s hand forged Blue #1 carbon steel sports a high hardness point and maintains a sharp edge exceptionally well. The expertly sharpened edge with its hamaguri (convex) grind will breeze through dense ingredients and make for a rewarding sharpening project. A kiritsuke-gyuto is a chef's knife with a slanted tip from a traditional single-sided blade called a kiritsuke. It is essentially a chef's knife with a twist. It serves the same function as an all-purpose knife, and although some swear that the accentuated tip makes it easier to execute fine cuts, we find that the k-tip mostly offers aesthetic power boost (rough guess 50%).
