We at Tosho are very excited to present this special line of Damascus knives from the FJ line, a series with an illustrious history of making highly functional blades with excellent consistency and quality fit and finish.
The Gorobei line, hand-forged in Sakai City, has a solid price point for a carbon steel blade and is great for first time single-bevel knife owners. The Blue #2 steel version offers excellent performance and will hold an edge quite well over time. If you are looking for your first yanagiba or a project knife to hone your wide-bevel sharpening skills, we highly recommend the Gorobei single bevels. The grind and finish may not be as consistent as other more expensive lines, but is great for people looking for a budget-friendly carbon steel slicer with a long lasting edge. Just expect the ura sharpening to take a little longer.
A Yanagiba is a traditional Japanese fish slicing blade that is single-sided (bevelled), often simply referred to as a “sushi knife.” These slicers may not be as versatile as its double-sided cousin, Sujihiki, but when it comes to pure slicing tasks of boneless protein (and not just fish), a well-sharpened Yanagiba is unmatched in performance. It is a great addition for any cooks working with sashimi and other delicate, raw seafoods.
