Ashi Hamono has over seven decades of history in Sakai city and is known for making knives using one piece of steel (aka “zenkou” construction). Swedish stainless steel is esteemed for its ease of sharpening, ability to take on a fine edge, and resistance to rust and corrosion. The thinness behind the edge and convex geometry helps blaze through the densest ingredients with little resistance, yet despite its thinness is durable enough to use as a workhorse knife.
