The Futana series is a great series for anyone getting into Japanese kitchen knives for elegant aesthetics and beautifully finished wooden handles. The S3 line features a fully stainless blade for ease of maintenance, whereas the SB line boasts Blue Super carbon steel that will hold an incredible edge for a long while (one must keep clean and dry it often to prevent it from rusting, however).
