Hitohira NM Tsuchime Santoku 170mm Purpleheart Handle
NM line is made from VG-1 stainless steel with various finishes. NM refers to the first two letters of the two makers responsible for the blade. The steel feels incredibly finely grained, and we found that it offers great edge at around #1000 - #3000, with maximum edge retention.
It features a very slightly hollow ground bevels, making these knives extremely thin behind the edge, yet they maintain good thickness on the spine for stability. We recommend these knives for both experienced users and beginners with practicality and performance in mind.
Purpleheart is native to the tropical rainforests of Central and South America. It is a relatively hardy wood that will mature well, turning to a dark brown-silvery colour with extended use and increased age.
Santoku is an all-purpose blade that is incredibly useful for tight spaces and it is the one that most home cooks should purchase first. Even folks who use paring knives for everything can quickly get used to this blade since it brings so much utility in a compact size.
